Belgian Waffles

I don't know that it is to the point of a craving, but Belgian waffles sound good almost any time to me. I woke up a couple of weeks ago wanting waffles, but we didn't have any waffle mix. I found a recipe online and Matt and I both really liked them. I'm going to share the recipe, as I found it, but listen... this calls for a lot of sugar, and a lot of butter. The first time I made them, I followed the directions exactly and they were delicious. I made them again last night and cut back a little bit on the butter and sugar and they were still delicious. This recipe made about 6 waffles in our waffle iron, and the batter stays good in the refrigerator for up to 3 days.

Belgian Waffles

Ingredients:
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 3 ½ teaspoons baking powder
  • 2 eggs, separated
  • 1 ½ cups milk
  • 1 cup butter, melted
  • 1 teaspoon vanilla extract
  • Sliced fresh strawberries or syrup
Directions:

In a bowl, combine flour, sugar, and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter, and vanilla. Mix well. Stir wet ingredients into dry ingredients until combined.

In small bowl or mug, beat egg whites until stiff peaks form (I put the egg whites in a coffee mug and put one beater attachment on my mixer to use, and it worked really well). Fold into batter.


Bake in a preheated waffle iron until golden brown. Serve with strawberries or syrup.
